YumMy Curry Noodle (Kanom Jeen Namya)

Ingredients

• 1 package Japanese Somen (12 oz.)


• 3 cups water


• 1 teaspoon salt

Sauce ingredients

• cups coconut milk


• 2 tablespoons red curry paste


• 2 tablespoons fish sauce


• 1 pound fish meat boiled (halibut or cod)


• 1 tablespoon roasted red onion or shallot and garlic

Cook'em!!

• In large pot, bring 3 cups of water to boil, add Somen, boil for 5 minutes.


• Add salt, boil for 2 more minutes. Drain and rinse in cold water.


• Place on serving plate.

Sauce

Boil the fish for 10 minutes. Drain.

In a mortar pound curry paste, and roasted onion and garlic until smooth.

Add cooked fish, pound until well mixed.

In a pot, with little cooking oil, stir fry the mixture well.

Add coconut milk, cook over medium heat.

Bring to boil, add fish sauce.

Stir well, remove from heat

Serve with Japanese Somen.

16 oz. coconut milk

1 - 2 pieces of white fish. (Grounded)

2 tbsp. Red curry paste1 oz. brown sugar1 tbsp. Fish sauce

1 - 2 Kaffir leafs. Finely chopped

½ cup sweet basil leafs

Thai Name: (Tom Yum Goong)

Ingredients:

2 cups Water

4 tbsp. Fish sauce

6 oz. of Shrimp, wash and peel

2 Kaffir Leafs (lime leafs)

2 Thai chili peppers

3 - 4 stems of fresh coriander

1 stalk of lemon grass. Sliced thin

6 tbsp. Fresh lime juice
